Sátiro (Clandestino) project comes with a provocative tone. Emerge from the hand of the winemaker and producer Manuel Vargas as a satire to an increasingly ambitious market when it comes to wine production processes. It’s a bold project, although respects the tradition of the Amphora wines, an ancestral process left as an inheritance by the Romans, and simultaneously modern winemaking processes such as stainless steel tanks with controlled temperature and automatic treading machines. Wines with an irreverent image, with labels that translate the project philosophy with a biographical feeling of the producer. These are wines with a gastronomic profile, with identity, that encourage reflection about an ancient heritage that extends to the table today.
Sátiro (Clandestino) white
The white wine consists in a typical Alentejo blend composed by the predominant Alentejo “Queen” Antão Vaz, along with Verdelho and Arinto. It is the result of a blend of wines fermented in amphora (Roman process) and wines fermented in stainless steel, aging for 3 months in French oak casks. At the end, the batonnage process was proceeded to enhance the volume, depth and complexity of the wine.
The result is an intense wine, with an aromatic balance between the notes of toast from the barrel and the mineral profile typical from amphoras aged wines. A polished, soft wine with good structure to accompany intense dishes such as roasts, pasta, risottos and cheeses. A complex wine to be served at a temperature of 9ºC.
Sátiro (Clandestino) red
The red wine is composed by Syrah and Aragonês (Tempranillo). Separate batches of clay and stainless steel carvings. The amphora blend is vinified by the ancestral process, manually filled with bunches with stalks, indigenous yeasts, without fermentation control. Long post fermentative maceration, respecting the traditional amphora process.
The result is a red wine with an intense color, an exuberant nose that shows youth. Aromas reminiscent of hand-carved wines along with spicy notes from the Syrah grape variety. An intense, powerful set, especially recommended to accompany red meats, roasts, spicy dishes, game and cheeses. should be served at 16ºC.
